I have never seen hyssop at a nursery - it is mainly available through places that sell heirloom plants (generally online).
Now is a good time to plant parsley. (In fact all the herbs you mentioned). Curly leaf parsley is much smaller plant than the flat leaf continental variety. - something to think about in rely to the space you have.
Mint can take over a garden so is best kept in a pot.

@Former-Memberyes i feared that hyssop may be a very sensitive and temperamental plant to grow. Oh well. I will still try.
My parsley self seeded and is just going back into seeding mode. Even parsley seeds are edible.
Plus rocket was the other easy to grow herb i meant to mention. Basically sources of edible greens out the garden. Good for lots of things.

Mr Darcy is very keen to get things done in the garden. Today we got stuck into the front yard. We both did a bit of weeding and I moved some nerine bulbs. Made noticeable progress 😀 in one of the garden beds.

I got a bit more weeding and mowing done today. I am anxious to break out the chainsaw and do some pruning but not able to do that until after settlement. What I have done is even pushing it a bit. Boys are keen for me to start a veg garden with them.

Have you heard of square metre gardening (or square foot gardening)? Surprising how much you can grow in a small bed without it being burdensome.

I suspect it has been a while since this garden has had any TLC so thinking more hair cut pruning nothing too drastic.
With the veg garden I am planning to get some little garden beds from bunnings. There is an old galvanised rain water tank I can have to cut down but saw these and decided that was easier and look better.

That looks like a good starting size @Determined the idea of square foot gardening you divvy bed up into squares and plant per square.

I don't think hyssop is particularly hard to grow, more that it is not widely available in regular nurseries.
@Adge are you planning on planting any summer veg this year?
